Tonight's dinner was worth a blog.

Recently, I've been working hard to learn how to cook, and it is starting to pay off. Nika and I had a really fantastic dinner tonight!

Here was the menu we enjoyed for the evening:

Sesame encrusted seared ahi tuna steak, marinated in soy + ginger

Twice baked potatoes stuffed with goat cheese, sour cream, and chives

Malaysian-style coleslaw with Napa cabbage, red peppers, + cucumbers, seasoned with Nam Pla (fish sauce), dark + light sesame oils, soy sauce, honey, + fresh garlic & ginger

I do weightwatchers, and this meal came in at 8.5 points. Ridiculously delicious and good for ya! Details after the jump.

The tuna was from this recipe, made with a beautiful .6 lb tuna steak that I shared with Nika. I marinated it overnight, and it was melt-in-your-mouth delicious. I cooked Nika's half more, since raw fish is really pushing it for a 9-year-old... but she did ask for seconds!

Tuna steak: 3.5 points

The potatoes were from this recipe. I didn't use oil on the outside, and I used fat free sour cream instead of half-and-half. I followed the suggestion to broil them at the end, which made them crispy and delicious! Amazing how goat cheese will melt when given the chance. Also, this was my first time using real chives; usually I go for cheaper scallions, but I think chives are milder and we really enjoyed them here. Plus, look at them - beautiful!

Twice baked potato: 4 points

The Malaysian coleslaw is a recipe from this cookbook, which I adore and use all the time. I make this coleslaw a *lot*. It is addictive and so freaking healthy! I usually make it twice in a row, I just chow down on it for days.

Coleslaw: 1 point

Total: 8.5 points. And worth them all!

I am SO impressed. I hope you (and Esther) live close by and feed me in my old age!

What are the points about? weight watchers? I so want the recipes!
